Who hasn't seen this lovely photo on Pinterest of this beautiful avocado and eggs baked together? I'm going to show you how to do that this morning. I've kind of gotten started here with a couple. The first thing you need to do is go ahead and slice that avocado in half. I'm just using a fancy little tool here. You can use a knife; they work really, really well. You're going to split this open, and you're going to take out the pit out of the avocado. The picture doesn't show you that if you pour a large egg into the spot where the avocado was, that the egg is going to run all over. The first thing we need to do is we need to flatten out the avocado so it'll lie nice and flat. Then you need to scoop some of this out, because again, if you use a large or extra-large egg, it is going to overflow. Perhaps if you want to make a whole bunch of these for company, buy some small eggs and use those because those would probably work better. We're going to scoop this out, and the next thing we're going to do is we're going to take a sheet of aluminum foil here, and we're going to make a little basket for the avocado and the egg, because some of the egg may run over. This will really help with that. Just repeat until you have all of them that you want done. Now you are simply going to crack an egg and put it into one of the avocado halves. It's very, very easy to do. You see, you just drop it in there, just like that. When you get them all in there, let's go ahead and season these up. I put a little bit of salt and a little bit of black pepper on here. I have a secret ingredient; it's really not secret. I am going to put a little bit of smoked paprika on the top. It adds a nice little bit of color and a little bit of heat. The next thing happens is these go in a 350 degree oven for about 20 or so minutes. Depending upon how hard you like the yolk is how long you're going to cook them. I topped mine with just a little bit of crispy bacon. I'm going to go ahead and take a bite of this.
