First, there are charcoal grills. These will provide you with that great char-broiled taste but lighting and cleaning them will require a little work. If you choose this option, consider picking up a chimney for starting the charcoal. Just pour in the lump charcoal or briquettes, add some newspaper or lighter cubes at the base and light. You can choose a standard charcoal grill like kettle, an offset grill which allows you to grill or smoke your food and a kamado which features a ceramic housing that helps retains heat and smoke; so it better penetrates the food.
