辣子雞丁。此菜用料特別講究,主料一定選用土仔公雞現殺現烹,以保持鮮嫩肥美,輔料非川產上等辣椒、川產茂汶大紅袍花椒不用,這樣烹出的菜品,香氣四溢,麻辣酥香,明汁亮芡,誘人食慾。辣子雞丁看起來很容易,但是做起來很考驗廚師的功力,尤其是對火候的把握,因為上乘的辣子雞丁必須做得色澤鮮豔,入口酥脆,香鹹適口。火候非常難掌握,可以說是“多一分則焦,少一分則不熟”。
