How-To: Make Potato & Parsnip Hash

Do you want to eat french fries for breakfast everyday but have it be healthy? We have the answer for you. When Chef Marquis Hayes was asked to make a breakfast hash that had all of the flavor of potatoes fried in oil but without the fat, he had a light bulb moment: the waffle iron. In this hash recipe, grated potatoes and parsnips are cooked and crisped to perfection in a waffle iron and topped with a poached egg, avocado purée and Crème fraîche. There is no need to leave your home for brunch.
