材料:苦瓜、薑絲、蔥絲、紅辣椒絲(裝飾用)、生鹹鴨蛋。 做法: 一般在餐廳都是用熟的鹹蛋來炒,這樣鹹蛋會化在湯裡頭,而吃不到鹹蛋。把生的鹹鴨蛋蛋黃剁碎與蛋白攪混。 把苦瓜切薄,先將苦瓜片汆燙一下釋放苦味並撈起備用。 炒鍋中加三大匙的油,拌炒鹹蛋,接著加入薑絲、蔥絲、紅辣椒絲爆香 再加入苦瓜片,加一點糖和雞精粉調味。 炒到湯汁收乾就可以起鍋了,這樣苦瓜也不會太爛而鹹蛋也粒粒分明。
