I love this creamy spinach spaghetti! The avocado makes the sauce so smooth and there is just such a lovely fresh flavour to the dish. I never used to like roast tomatoes until I had them in this pasta...so hopefully if you feel pretty negative or indifferent to roast tomatoes you try this out and feel the same way!
