Cucumber Tomato Salad is my all-time summer favorite. I have yet to figure out why I do not eat it in the winter, but for the summer it is light, cool, and refreshing. I got tired of chopping the vegetables the same old way, so I spiced up the dish with a different presentation. I hope you enjoy. Use the vegetable peeler to thinly slice the cucumber. Move in the vertical direction and you should end with a large bowl of long, thin cucumber slices. Slice all the way around the cucumber until you reach the seedy core. I implore you to eat the seedy core as is. Drizzle the cucumber slices with vinegar, olive oil, basil, salt and pepper. Toss it all together, before throwing in the tomato slices. Enjoy your cucumber tomato salad, as well as the rest of your day feeling light and refreshed.
