Milano Cookies - with yoyomax12

Add the egg whites a little at a time until combined at low speed, blend in the vanilla. Add flour and mix until just combined (no more dry flour in mix) Put the batter in a piping bag with a plain 1/4" round tip (or plastic bag with corner cut off). Pipe 2 inch sections of batter onto a cookie sheet covered with a silicone mat or parchment paper. Make sure they are at least 2 inches apart as they spread quite a bit. Bake at 350F about 10 minutes until edges are a light golden brown. Remove from oven, allow to cool for a few minutes and then transfer to a wire rack. Prepare ganache for filling (below) Chocolate ganache recipe: (this make a LOT you might want to cut the ingredients in half if you don't want some leftovers) 9 oz chocolate (I used semi sweet chocolate chips) 1/2 stick (1/4 cup) butter cut into small pieces 1/8 cup powdered sugar 3/4 cup heavy cream, milk or evaporated milk Place the chocolate chips, butter and powdered sugar in a bowl. Heat cream until very hot and pour over chocolate/butter/sugar in the bowl. Let sit for a few minutes and then stir until smooth. Place the ganache in the refrigerator and allow to chill until ganache reaches a frosting like texture/thickness. Place ganache in a piping bag with a plain round tip and pipe a line of ganache down the center of one of the cookies (bottom of cookie, flat side). Place another cookie bottom side down on top of the filling. These cookies are best eaten the same day as they have a tendency to lose their crispness the following days (they are still delicious though!)
