I admit to not liking matcha powder when I first tasted it, but since I have baked with it a few times, I really do enjoy it. I have just about used up that big container I bought when I made the green tea macarons and I may have to buy more! n Green Tea ice cream video: www.youtube.com/watch?v=DVYM_4gqlEg Green Tea macarons video: www.youtube.com/watch?v=eMAQPw4ijWc 2 1/4 cups all purpose flour 1/4 tsp salt 1 cup unsalted butter at room temperature (or if you use salted butter omit the added salt) 1/2 granulated sugar 2-3 tbsp coarse sugar for sprinkling 2 tbsp matcha powder Cream together matcha powder and butter, beat in sugar and then gradually add in flour (with salt mix in if using). Blend until combined to get a crumbly dough. Bring it together into a ball with your hands and roll out to 1/4 inch thickness between sheets of parchment. Cut out into desired shapes. Chill dough with cutouts in freezer for 15-20 minutes until firm. Remove cutouts and transfer to parchment or silicone mat lined cookie sheet. Re-roll dough scraps and continue to cut out cookies. Sprinkle cookies with additional coarse sugar if desired. Bake at 325F for 17-22 minutes until firm to the touch and dry, they will not brown. Cool slightly and transfer to wire rack. Store in a covered container at room temperature. This recipe makes about 80 1-2 inch cookies.
