Caramel Swirl Cookies - with yoyomax12

These cookies have an amazing caramel/cream cheese swirl in them. One of the best cookies I've ever made and I've made a LOT of cookies. Cookie playlist: www.youtube.com/playlist?list=PLDBC2190E873D6840 Subscribe to my channel for more videos: www.youtube.com/subscription_center?add_user=yoyomax12 Cookies: 1 cup butter softened 4 oz cream cheese softened 1 cup packed brown sugar 1 egg yolk 1 tsp. maple flavouring (or vanilla extract) 2 3/4 cups all purpose flour Filling: 30 caramels 6 oz. cream cheese softened. In a large bowl cream the butter, 4oz cream cheese and brown sugar together until light and fluffy. Blend in the egg yolk and maple flavouring. Blend in the flour a little at a time until combined. Chill the dough in the fridge 3-4 hours until firmer and easy to work with. I put mine in the freezer squished flat in a bag for about an hour. To make filling, melt 30 caramels in a small bowl in the microwave. Mine took about 2 minutes on high to melt. Stir in the 6oz of cream cheese and keep stirring until smooth. Divide dough into two portions. Roll out dough between sheets of waxed paper or parchment paper until you get a rough rectangle about 1/4" thick. Spread half the caramel filling over dough to about 1/2" from edge. Roll up dough as tightly as you can using the parchment to help you roll the dough if it is too sticky. Wrap dough log in parchment and chill for 3-4 hours in fridge or about an hour in freezer until very firm. Repeat with second portion of dough and caramel filling. You will end up with two dough logs. Slice cookies from dough logs using a sharp knife in 1/2" slices. Place slices onto a greased cookie sheet about 1 inch apart and bake at 350F for 12-14 minutes or until bottoms and edges are light brown.
