Pretty little rainbow flowers in cookie and cake flower pots! Rainbow playlist: www.youtube.com/playlist?list=PL6E5872589178834E You can use any kind of sugar cookie dough recipe for these flowers, but I recommend an non-spreading recipe like an ice-box sugar cookie recipe. You can also use a from scratch recipe for the chocolate cake portion. Lucky for me, I had a partial box of chocolate cake mix in the cupboard that needed to be used up. This sugar cookie recipe and cake batter will make enough for at least 12-20 flower pots and flowers (plus a whole bunch of extra flowers). If you only want a dozen, then I recommend making a half recipe of the cookie dough. You can also scale these down and use mini muffin tins and toothpicks for stems. Ingredients: Sugar cookie dough: 1 cup butter 1 cup sugar 1 egg 1 tsp vanilla 3 cups flour 1 1/2 tsp baking powder 1/2 tsp salt "Dirt" filling 3/4 cup chocolate cake mix 1 egg 3 tbsp water *****NOTE**** I SAY 4 tbsp OF WATER IN THE VIDEO, BUT IT IS THREE! Sorry :( 2 tbsp vegetable oil Gumdrops cut into small leaf shapes pieces lollipops sticks. Method: Cream the sugar, egg, butter and vanilla together until light and fluffy. Blend in the baking powder and the salt and then blend in the flour a little bit at a time until combined. The dough will be soft. Remove a third of the dough and tint it with a little bit of orange and brown food colouring. Paste food colour is best as it won't make the dough sticky. This will make a terra cotta colour. Divide the remaining dough into six equal portions and tint the colours of the rainbow. Chill the dough about an hour. Divide each dough colour portion into two pieces. Take one of the pieces and roll it out into a long rope about 12 inches in length. Repeat with the other half. Continue this way until you have a 12 inch rope of each colour. Chill the ropes on a cookie sheet until they are firm. Arrange the red, orange, blue, green and purple ropes around the yellow rope. The yellow will be the center of the flower and the other colours petals. Press them gently together and wrap the log (made up of the smaller ropes) in plastic wrap or parchment paper. Chill for 2-3 hours. Slice the log into 1/4 inch slices and place on a greased cookie sheet. Insert lollipop sticks (that have been tinted green) into the the flower and bake the flowers at 350F for about 10-12 minutes until set and bottom just very very light brown. The colour and shape will change very little. Allow to cool completely. Flower pots: Roll out the reserved terra cotta coloured dough between sheets of waxed or parchment paper until they are about 1/8" thick. Cut out 3 inch circle shapes and chill the cutouts if you find they are breaking when you try to lift them off the cookie sheet with a spatula. Rolling them out just a bit thicker than 1/8" may help too. Line a cupcake pan with the cutouts. Pressing gently into the bottom of the cups. Keep in mind they will not reach all the way to the tops of the cupcake molds. Repair torn or thin spots with dough scraps. In a small bowl combine 3/4 cup of chocolate cake mix and add one egg, 3 tbsp water and 2 tbsp vegetable oil. Mix well and fill the cookie dough pots to about the halfway mark with the cake batter. Bake at 350F for about 15-20 minutes until the cake is done and a toothpick inserted in the center comes out clean. Allow to cool completely. Frost with chocolate frosting and then dip into chocolate cookie crumbs to simulate potting soil. Insert one flower into the cookie and cake pop and add leaves by cuting some green gumdrops into thin oval shapes. Press the leaves into the frosting near the lollipop stem. RECIPE NOTES**** This sugar cookie dough can be fussy to work with, the trick is to find the perfect temperature. Chilling or allowing the dough to warm a bit may help if it continues to break or tear. This idea is an almagamation of several recipes and ideas I have collected over time.
