Shamrock cupcakes: www.youtube.com/watch?v=13535j9bQYM Mint flavoured sugar cookies: recipe found here: flour-de-lis.blogspot.ca/2012/01/mint-chocolate-chip-cut-out-cookies.html I made a half recipe in the video. Here is the full recipe. 1 cup butter softened 1 cup granulated sugar 1 egg 1/2 tsp peppermint extract Food colour 2 1/2 cups all purpose flour 2 tsp baking powder 1 tsp salt In a medium bowl stir together flour, baking powder and salt, set aside. In a large bowl cream together the sugar and the butter. Blend in the egg and the peppermint extract. Add enough food colour to get the desired shade of green. Blend in flour mixture a little at a time until combined. Bring dough together into a ball and roll out to 1/4 inch thickness between sheets of parchment paper. Cut out circles using cookie cutters. Freeze the cut outs for about 20 minutes until firm and then place the cut-outs on a greased cookie sheet about 1.5 inches apart. Bake at 350F 8-10 minutes until the bottoms are light brown and cookies are set. Cool cookies completely. Fill clear plastic cups 3/4 full with green candies and add brown candies for the last quarter. Pipe frosting on edge of glass and invert onto cooled cookie. Decorate with paper buckle.
