These Santa cookies are fun to make and are sure to impress people you serve them too. The reindeer cookies are so cute and so simple! I had planned on making the reindeer cookies a stand-alone video, but it would have been very short, lol. You can use any sugar cookie recipe to make these. Almond Sugar Cookies 1 cup (250g) butter softened 1 1/2 cups (310g) white granulated sugar 1/2 tsp (2.5ml) baking powder 1/2 tsp (2.5ml) salt (I omitted it because I used salted butter) 2 eggs 1/4 cup (60ml) milk 1 tsp (5ml) vanilla extract 1/2 tsp (2.5ml) almond extract 1/2 cup (39g) ground almonds 3 cups (435g) all purpose flour In a large mixing bowl, blend the butter and sugar together until light and fluffy. Add the baking powder and salt (if using). Beat in the eggs, milk, vanilla and almond extract until combined. Beat in ground almonds and as much of the flour as you can beat in with the mixer. Switch to a spoon to mix in the last of the flour if necessary. Divide dough into two portions, wrap and refrigerate dough for at least 2 hours. Roll out dough between sheets of waxed or parchment paper and cut out desired shapes. If the dough is still sticky, place dough with cutouts in the freezer for 15 minutes and it should be easier to remove the cut out pieces. Place them about an inch apart on a cookie sheet (greased or covered with parchment/silicone mat) and bake at 350F for about 7-10 minutes, until edges are light brown. The cookies will stay pretty much the same colour and shape and don't spread much. I'm going to guess that this recipe will make about 3 dozen cookies at 1/4" thickness, depending on size of course. Egg Yolk Paint: 1 egg yolk few drops of water food colour Combine the egg yolk with water and food colour and use it to pain cookies prior to baking.
