Watermelon Whoopie Pies

Her new channel here: www.youtube.com/user/xpandaliciouss Here is where I found the idea for the whoopie pies: www.wilton.com/idea/Watermelon-Whoopie-Pies Here is where I found the whoopie pie recipe (I only used one teaspoon of vanilla and no vanilla bean) letsmakewhoopie.wordpress.com/2011/06/12/double-vanilla-whoopie-pies-with-chai-spice-filling/ Whoopie pies: 2 1/4 all purpose flour 1 1/2 tsp baking powder 1/2 tsp salt Combine above three ingredients together in a small bowl 1/2 cup butter 1/2 cup white sugar 1/2 cup packed brown sugar 2 eggs 1/2 cup buttermilk 1 tsp vanilla extract In a large bowl cream together the butter and sugars, beat in the eggs and vanilla, blend in the buttermilk. (If you don't have buttermilk combine 1/2 cup milk with a teaspoon of vinegar, stir and let sit for a few minutes) 2 Tb milk 1 tsp baking soda 1 tsp white vinegar Combine the above three ingredients in a small bowl or measuring cup, it will foam up slightly. To the large bowl blend in the dry ingredients alternately with the foamy milk mixture and blend together. Divide batter into two portions and tint on red (or pink) and one green. Add about 1/4 cup of miniature chocolate chips to the red/pink batter and stir. Follow the technique in the video for filling the whoopie pie pan. Bake at 375F for 8-10 minutes, watch carefully, when they start to get just the tiniest brown on the edges take them out. They will be dry if overbaked. In large bowl, beat butter with electric mixer until creamy. Add sugar and salt to the butter; mix well. Add marshmallow crème (fluff) and vanilla; blend well. Use immediately to fill whoopie pies or refrigerate covered up to 1 week.
