Recipes Using Cake Mixes #19: Chocolate Fudge Banana Cookies

These have a great banana flavour and taste a lot like brownies. I have two more types of cookies using this recipe book coming up soon; lime in the coconut cookies and potato chip butterscotch cookies. :) Recipe: 2 cups chocolate chips (any kind), divided into 2-1 cup portions 3/4 stick of butter (6 tablespoons) 1 -2 layer package chocolate cake mix (devil's food recommended) 3/4 cup mashed banana (2 small or 1 1/2 large) 1 egg 1 cup roasted slightly salted cashew pieces coarsely chopped (optional) or any other kind of toasted nut. Microwave 1 cup of chocolate chips with the butter for about 1 minute on high until melted. Stir until smooth and set aside to cool slightly. In a large bowl place the cake mix, egg, cashews, mashed banana and melted chocolate/butter mixture. Stir with wooden spoon until combined. Stir in remaining one cup of chocolate chips. Drop by tablespoonfuls 2 inches apart onto a greased/parchment lined/silicone mat lined cookie sheet. Bake at 375 F for about 9-12 minutes until set. They will still seem a bit squishy in the middles after that time, but if the edges are firm they should be okay. Underbaking them slightly will make them fudgier and moist. Cool 5 minutes on cookie sheet and transfer to wire racks to finish cooling completely Store in airtight container. I made big cookies and ended up with about a dozen. If you make smaller ones using a tablespoon full like indicated in the recipe you will end up with about 2 dozen.
