Chocolate Mint Cookies

Below are TWO recipes, the one in the video using the mix and one "from scratch" that you may want to try instead. Using the packaged cookie mix: 1 pouch (17.5 oz) or 500g package of sugar cookie mix 1/2 cup butter softened 1/2 tsp peppermint extract 6-8 drops green food colour 1 egg 1 1/2 to 2 cups mint flavoured chocolate chips (or a combination of regular and mint chocolate chips) Combine the cookie mix, egg, butter, food colour and peppermint extract in a large bowl, stir until you get a smooth dough, add the chocolate chips and stir until combined. Place cookie dough on an ungreased cookie sheet about 2 inches apart and bake at 350 F for 8-10 minutes or until bottoms are light brown. Cool on cookies sheet for 2-3 minutes and then move to wire racks to cool completely. From "scratch" recipe: 2 cups all purpose flour 1/2 tsp baking powder 1/4 tsp salt 1/2 cup butter softened (unsalted), if you use salted omit salt with the flour 1 cup sugar 1 large eggs 1/2 tsp peppermint extract 6-8 drops green food colour 1. stir together flour, baking powder and salt together, set aside 2. Cream together sugar and butter, add eggs, peppermint extract, food colour and mix until fluffy. Gradually add flour mixture a little at a time. Mix until you get a smooth dough. Add in 1 to 1 1/2 cups of mint chocolate chips or combination regular and mint chocolate chips and stir. 3. Heat oven to 350F and drop cookie dough onto a greased or parchment (or silicone mat) lined cookie sheet by heaping teaspoon fulls about 2 inches apart and bake 10-12 minutes until bottoms are light brown. Let cool on cookie sheet for 2-3 minutes and then move to wire racks to cool completely.
