Sunshine Butter Cookies (with Bonus Cookie Bees)

(please subscribe while you are there, this lady is awesome!) www.youtube.com/watch?v=9Bp3BSFnaGw ************************************************************************************* Cookie Recipe (royal icing recipe below this one) 3/4 cup butter softened 3/4 cup sugar 1 egg 2 1/4 cups all purpose flour 1/4 tsp salt Grated peel of 1/2 lemon 1 tsp frozen lemonade concentrate thawed Thin pretzel sticks yellow paste food colour icing/candies for decorating 1. beat butter and sugar in large bowl at high speed of electric mixer until fluffy, add egg, beat well 2. combine flour salt and lemon peel in a medium bowl, add to butter mixture, stir in lemonade concentrate. refrigerate 2 hours 3 prepare lemonade royal icing (see recipe below) cover let stand at room temperature, preheat oven to 350F, grease cookie sheets 4. Roll out dough on floured surface to 1/8" thickness, cut out cookies using a 3 inch round cookie cutter, place cookies on prepared cookie sheets. Gently press pretzel sticks into edges of cookies to resemble sunshine rays. Bake 10 minutes or until lightly browned. Remove to wire racks, cool completely 5. add food colouring to lemonade royal icing, spoon about 1/2 cup icing into resealable plastic food storage bad, seal, cut tiny tip from corner of bag, pipe thin circle around flat side of each cookie to create outline. 6. add water 1 tablespoon at a time to remaining icing in bowl until thick but pourable consistency, spoon icing in cookie centers staying within outline. 7. decorate cookies with icing or use candies to make sunny faces. let stand until dry. Lemonade Royal Icing 3 3/4 cups sifted powdered sugar 3 tablespoons meringue powder 6 tablespoons frozen lemonade concentrate thawed Beat all ingredients in large bowl at high speed of electric mixer until smooth. **NOTES** You can substitute "already made" lemonade for this, but it won't have the same flavour and sweetness. The lemonade concentrate packs in so much more flavour and is much sweeter. It is also less watery than prepared lemonade, so you may have to use less if you are going to use the prepared stuff. Use the rest of the lemonade concentrate to make lemonade! Just reduce the amount of water a bit. Make sure sun pretzel "rays" are on the cookie sheet, they will blacken if off of the edge of the sheet. The pretzels become very brittle when baked and will break off easily. These cookies would be a challenge to transport to another location. The cookie itself is very easy to work with but I found the flavour of it just "okay", the lemonade icing was delicious though and I'd made royal icing using that ingredient again for sure.
