Earl Grey Tea Cookies

This one from Martha Stewart's cookie cookbook. These are shortbread type cookie. The tea flavour comes through very nicely in them. Put these out for Santa and he will be able to stay awake all night! 2 cups all purpose flour 2 tablespoons finely ground Earl Grey tea leaves (about 4 tea bags) 1/2 tsp salt 1 cup butter at room temperature 1/2 cup confectioner's sugar (icing sugar) 1 tbsp finely grated orange zest 1. mix flour, tea and salt together in a small bowl. 2. cream butter, sugar and orange together and beat in the flour mix a bit at a time until combined. 3. divide dough into two parts and roll the dough into 1.5 inch diameter logs on waxed or parchment paper. Roll the dough log up into the parchment and put in freezer for 1 hour or until very firm. 4. Preheat oven to 350F, cut logs into quarter inch slices and place on parchment covered cookie sheet (use the parchment you rolled the dough in!) Bake for 13-15 minutes until the bottom is light brown and edges golden. Music by Jason Shaw www.youtube.com/user/audionautix Jason Shaw@audionautix.com
