Enjoy them Naked or covered in powdered sugar (the cookies, not you) Jon: www.youtube.com/user/PalmOliveSoap 1/3 cup honey 1/4 cup butter 2 cups all purpose flour 1/4 cup granulated sugar 3 tbsp finely chopped crystallized ginger 1/2 tsp baking soda 1/4 tsp ground white pepper (OPTIONAL, I didn't have white pepper, so I didn't put any in) 1 egg slightly beaten Powdered sugar 1. In a small saucepan, combine honey and butter. Cook and stir over low heat until butter is melted. Remove from heat and let the mixture come to room temperature. 2. In a medium bowl, stir together the flour, granulated sugar, ginger, baking soda and pepper (optional). Set aside. 3. Stir egg into honey/butter mix, gradually stir in flour a little at a time and mix with electric mixer. Knead in the last of the flour by hand. Chill dough for 1 hour or until easy to handle. 4. Preheat oven to 350F. Divide dough into 12 portions. Take one portion at a time and roll it out into a 10" long rope shape. Cut ropes into 1/2 inch pieces. Place pieces 1/2 inch apart on an ungreased cookie sheet. 5. Bake for 6-8 minutes or until the tops are lightly browned. Transfer cookies to paper towel and let cool. Roll in powdered sugar.
