Sweet Cherry Truffles

First time I make truffles, it was a bit of a trial and error kind of thing but the end result was very impressive. The trick is getting the chocolate to the right level of firmness (and not to use a melon-baller!) lol. 1-12 oz package of semisweet chocolate pieces (about 2 cups) 1/3 cup whipping cream 4 tsp cherry brandy (optional) 2 tbsp finely chopped candied cherries Line a baking sheet with waxed paper and set aside. In a heavy saucepan, combine chocolate and cream. Cook and stir over low heat (constantly stirring) until chocolate melts. Remove from heat and stir in brandy (if desired) and chopped cherries. Chill about 1hour or until firm. Shape chilled chocolate mixture into 3/4 inch to 1 inch balls. Roll balls in cocoa powder, finely chopped nuts and/or powdered sugar. Makes about 24 truffles.
