Crispy Coffee Cookies

The recipe book says that this recipe is by Romane Moeller Colorado Springs, Colorado She says " I created this recipe because I wanted an easy-to-make cookie that folks can't resist. These tempting treats have a hint of coffee flavor and aren't overly sweet" Message from me to Romane: Add more darn flour. 1 cup sugar 3/4 cup vegetable oil 1/3 cup instant coffee granules (regular or flavour of your choice) 2 tbsp hot water 2 eggs 2 1/2 cups flour (I had to increase this to 3 cups for the dough to be even remotely workable) 1 1/2 tsp baking powder 3/4 tsp salt Additional sugar for coating cookies Mix sugar, oil and eggs together. Mix water and coffee granules together until disolved. Add coffee mix to sugar/oil/egg mix. Blend well. Add 1 1/2 tsp baking powder and 3/4 tsp salt. Gradually blend in the flour. Roll into 3/4 inch balls, then roll in additional sugar. Place on greased cookie sheet and bake at 350 for 8-10 minutes until set (the bottoms will not be brown).
