San Diego chef Chad White started out a cook in the Navy and quickly moved up in San Diego's culinary industry. After multiple stints as the head chef at others' restaurants, White began a monthly pop-up dining experience known as Plancha Baja Med. How this was done: This was a one-camera shoot over multiple days. I interviewed White on the first day, filmed him doing prep work another day and then attended the event the following night. The challenge was moving around in a small space and keeping pace with the fast-moving chefs. Audio was recored separately and matched up later. The video was edited in one day.
