材料:帶骨仿土雞腿 1支、蔥1支、薑20g 調味料:鹽2匙、米酒2匙、香油2匙 作法: 1.取湯鍋煮熱水,另備冰塊水、讓雞腿先過熱水後再泡冰塊水,等熱水滾起來後再放入雞腿,再泡冰塊水(來回3次)後再放回滾水中煮,放入蔥、薑、米酒以小火蓋上鍋蓋微滾5分,熄火泡熱水30分後抹上鹽、米酒、香油。 2.冷卻後才能切片呈盤。
