How To Grill - Pressing Down on Steaks when GrillingThis short video shows why I like to press down on the steaks when I turn them. The two main reasons are to get good contact with the grill and also to 'brand' the meat, to really get those bar-marks etched into the meat. If you can't get your grill hot enough, there is no way you'll be able to grill The Perfect Steak. The grill-surface needs to be at least 350 Degrees F to grill steak.
How do you tell? Two ways are shown here:
1. Use a Grill Surface Thermometer, or
2. Put some popcorn on the grill and when it starts to pop, you'll know that you've got a really hot grill surface.
