2 + 1/3 cups buckwheat flour + more for rolling dough
1 tsp baking soda
1 tbsp ginger ground
1 tsp mixed spice
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp fine pink salt
1 cup packed unrefined can sugar
1/4 cup molasses
1/4 cup apple sauce
1 tbsp almond milk + 2-3 tsp more for mixing dough (depending on your consistency)

Gluten Free Bread Recipe ~ Noreen's KitchenGreetings! Today I am sharing my recipe for gluten free flax and sesame sandwich bread. This is not your run of the mill gluten free bread and if you have tried gluten free bread in the past and not enjoyed it, this recipe is going to change all that.
I will preface this by saying that I do not prescribe to a gluten free life and I don't have any plans on changing to one. I still bake regular bread once a week for my family. I bake this for a friend who had to go to a gluten free diet for her health. She loves this bread and always says that she loves it more than the cardboard gluten free bread that is available in the grocery store.

Please adhere to the recipe. Don't leave out the vinegar and make sure to beat the batter for at least three minutes. These things are crucial to a successful loaf. If you leave anything out or add anything in you may risk a disaster instead of a beautiful spongy loaf of sandwich bread.

Gluten-Free Flatbread with Pesto, Homemade Ricotta, Arugula and Parmesan
Homemade Ricotta:
3 1/2 cups whole milk
1/2 cup half and half
1/2 teaspoon salt
3 tablespoons lemon juice
1.Combine milk, half and half, and salt in a medium saucepan over medium-low heat. Slowly heat the mixture to 190F using a candy thermometer, stirring occasionally to prevent scorching. Remove the saucepan from the heat and add the lemon juice, stirring once or twice to just combine. Let the mixture sit for 5-7 minutes.
2.Line a colander with a few layers of cheesecloth and place it over a large bowl. Pour the separated milk mixture through the colander and let the curds strain for at least an hour. After the curds have strained remove the fresh ricotta to an air-tight container and refrigerate up to 4 days.
Pesto:
1 1/2 cups fresh basil
1 cup fresh parsley
2 garlic cloves
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/2 cup extra virgin olive oil
1.In a bowl of a food processor combine all the ingredients except the olive oil. Pulse until the mixture is finely chopped. With the motor running, slowly add the olive oil and mix until smooth. Place in an airtight container and refrigerate until ready to serve or up to 1 week.
Gluten-Free Flatbread:
1/4 cup gluten-free cornmeal
1/2 cup lukewarm water
1 1/4-ounce packet active dry yeast
1 teaspoon sugar
3/4 cup all-purpose gluten-free flour blend, (recipe below)
3/4 cup tapioca flour, plus more for rolling dough
2 tablespoons dry buttermilk powder or dry powdered milk
1 teaspoon agar-agar powder or unflavored gelatin powder
1 teaspoon salt
1 teaspoon xanthan gum **
1 1/2 teaspoons cider vinegar
2 teaspoons olive oil, plus additional to brush dough
Salt and pepper
4 sprigs thyme, leaves removed
2 cups arugula
Parmesan cheese shavings
1.Preheat oven to 400F. Line a baking sheet with parchment paper and sprinkle with gluten-free cornmeal.
2.In a small liquid measuring cup stir to combine the lukewarm water, yeast, and sugar. Let the mixture stand for 5-10 minutes, until the yeast starts to foam.
3.In the bowl of a stand mixer fitted with a paddle attachment thoroughly combine the flour blend, tapioca flour, dry buttermilk powder, agar-agar, salt and xanthan gum. With the mixer on low speed add the vinegar, olive oil and yeast mixture. Turn the mixer up to high and mix dough 3-4 minutes. If the dough is dry and not coming together add up to a 1/3 cup additional water, 1 tablespoon at a time, until the dough just combines.
4.Remove dough to a large clean surface that is dusted with tapioca flour. Roll the dough to 1/8-inch thick and approximately the size of the sheet tray. Transfer the dough to the parchment paper sprinkled with gluten-free cornmeal. Brush the dough with olive oil, season with salt, pepper and thyme leaves. Bake in the oven for 10-15 minutes until the dough is completely cooked through, and the edges have become crisp and golden brown.
5.Remove the flatbread from the oven. Spread an even layer of pesto over the flatbread, top with ricotta, arugula, and Parmesan shavings.
**Note: If you are using a different all-purpose gluten-free flour blend than the recipe below check to see if the recipe contains xanthan gum. If the recipe does not contain any xanthan gum add 2 teaspoons to this recipe instead of 1 teaspoon.
Alex's All-Purpose Gluten-Free Flour Blend :
2 1/2 cups brown rice flour
1 1/2 cups sweet rice flour
1 1/3 cup tapioca starch
2 cup sorghum flour
2/3 cup cornstarch
1/2 cup potato starch (not potato flour)
4 teaspoons xanthan gum
1.In a large bowl thoroughly whisk to combine all the ingredients. Store in an airtight container until ready to use.
Yield: 8 cups

*I've found that "healthy" videos can be soooooo controversial on YouTube so here is my two cents: One "bad" meal will not make you fat. And one "healthy" meal will not make you thin. There is no right way or wrong way to eat. As long as you are nourishing and sustaining your body you are doing something right. I am not here to tell you that because you like fast food and cookies that you're unhealthy or wrong, nor am I here to praise you for being a gluten free raw foodist. YOU DO YOU. Eat what makes you feel happy and healthy, screw what everybody else is doing! I eat the way I eat because it makes me feel healthy and happy & In this video I'm showing you 3 of MY personal favorite things to eat for lunch, but feel free to substitute whatever suits your liking!

A bit about my diet- When I was 17 I got a protracted case of mono which caused me to be violently ill after every thing I ate or drank. After almost a year of not being able to keep any food down, I had lost about 30 pounds and despite getting better from mono, my gut was permanently damaged. As shown by an endoscopy my stomach lining & esophagus were torn to shreds and I was diagnosed with non ulcer dyspepsia. From there my doctor, my nutritionist and I came to realize that dairy, grains, and foods with high fat content were causing my digestive issues and pain. I have been dairy free since being diagnosed with an allergy over 3 years ago, and I've been grain free since last January. I listen to my body and stay away from foods that upset my stomach and digestion, hoping that in time I will be able to fully heal my gut and reintroduce both dairy and grains back into my diet. If you are thinking of undergoing a lifestyle change regarding your diet, advice your doctor so you can come up with a plan together.

Mason Jar Salad:
2 tbs of your favorite salad dressing (I used Balsamic Vinegar)
1/4 of a chopped cucumber
1 handful of shaved carrots
2 chopped beets
1/4 cup chopped crimini mushrooms
A few slivers of a red onion
1/2 cup halved cherry tomatos
1/2 cup cooked red quinoa (Feel free to sub for whatever protein)
Fill the rest with your favorite greens! (I used kale, chard & spinach)
Corn & Bean Salad
1/2 cup rinsed and drained black beans
1/2 cup rinsed and drained garbanzo beans
1 cup of cooked organic corn (look for GMO free!)
1 hand-full of diced red pepper
1 hand-full of diced red onion
1 hand-full of halved cherry tomatoes
Cilantro to taste (I obviously like a lot haha)
Juice of 1/2 of a lime
& a drizzle of balsamic vinegar!
Greek Hummus Wrap
1 Wrap of your choice (tortilla, pita, whole wheat, rice, coconut, etc.)
2 tbs of Hummus (I like Trader Joe's organic original)
1 hand-full of chopped romaine lettuce
1 hand-full of halved cherry tomatoes
Some thinly sliced red onion
& a few halved kalamata olives!

Roasted Herb Chicken Breast with Roasted Baby Potatoes and Tomatoes
12 ounces baby potatoes, halved
2 bone-in, skin-on chicken breasts
1 tablespoon canola oil
1/2 cup cherry tomatoes
1 clove garlic, smashed
1/2 lemon, juiced, rind reserved
1/2 tablespoon fresh rosemary, chopped
1/2 teaspoon fresh thyme leaves, chopped
Kosher salt and ground black pepper, to taste
2 tablespoons basil, chopped
1.Preheat oven to 425F.
2.In a small saucepan add the potatoes, cover with cold water and 1 tablespoon salt. Bring to a boil and cook 5-8 minutes, or until the potatoes are cooked half way through. Drain and reserve.
3.Pat chicken breasts completely dry with paper towels. Season both chicken breasts with 1/2 teaspoon salt, rubbing it into the chicken and under the skin to ensure it sticks.
4.In a medium oven-proof skillet heat canola oil, place chicken skin side down and cook until golden brown. Flip the chicken over, add the reserved potatoes, tomatoes, garlic, lemon juice and the lemon rind, rosemary, thyme, and season with salt and pepper. Place in the oven and roast 20-25 minutes or until the internal temperature of the chicken reaches 160F. Remove from the oven and allow chicken to rest 5 minutes. Garnish with chopped basil.
Tuscan Kale Caesar Salad
4 anchovy fillets
3 tablespoons fresh lemon juice
1 egg yolk
1 garlic clove
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
Salt and ground black pepper, to taste
1/3 cup extra virgin olive oil
2 bunches Tuscan kale, stems removed and thinly sliced
1/4 cup roasted almonds, chopped
1/4 cup grated Parmesan cheese
1.In the bowl of a food processor blend together the anchovies, lemon juice, egg yolk, garlic, Dijon, Worcestershire sauce, salt and pepper until smooth. With the motor running, slowly add the extra virgin olive oil and process until the dressing is emulsified. Adjust seasoning with salt and pepper.
2.Toss shredded kale and Caesar dressing in a large mixing bowl. Top salad with roasted almonds and Parmesan cheese.

Ingredients:
3 large eggs
¼ cup oil
1 ½ cups warm water
2/3 cup dry milk (optional)
1 cup tapioca flour
1 tablespoon xanthan gum
1 teaspoon salt
3 tablespoons organic sugar
½ cup flax meal
½ cup oat flour
1 cup brown rice flour
2 ¼ teaspoons yeast
Directions:
1. Place wet ingredients in the bread bin (make sure your paddle is already in).
2. Put dry ingredients in second. Then pour yeast on top.
3. Set machine for #2 loaf and use 3 hour setting.
