Tropical Avocado Popsicle RecipeIt's no secret, I love avocados. They are one of my favorite fruits. Part of the reason is I love exploring how to use them outside of guacamole. Not that my guac isn't the best damn guac you'll ever have!
I've used them margaritas, made a gazpacho with them and now they are in a popsicle. Made with coconut milk and fresh tarragon, the popsicles are creamy (Creamsicle, what?), bright and earthy. They aren't as sweet as your average popsicle so if you tend to shy away from sweets...this is the dessert for you!
Ingredients
2 Avocados
2 Limes
1 ½ Cups basic simple syrup
¾ Cup Coconut Milk
20 fresh tarragon leaves
1. Take the 20 tarragon leaves and add them to a cocktail mixer. Add 1 tablespoon of the simple syrup and muddle the tarragon, releasing all of those tasty essential oils. Remember, you are not trying to beat up the herb or blend it, you just want to give it a good rub (that's what she said!).
2. After you have muddled the herb, add the remaining simple syrup and set aside.
3. Add the fruit from the two avocados along with the two limes juiced to your food processor and puree them. If you need to know how to safely pit an avocado, watch my how-to video.
4. Mix the pureed avocado, the 3/4 cup coconut milk and the 1 1/2 cups of tarragon-infused simple syrup to a large measuring cup. You should have nearly 3 cups of liquid.
5. Divide the mixture amongst the popsicle mold. I left a little room at the top and topped them off with some sweetened coconut milk. It was just 1/8 cup coconut milk and 1/8 cup simple syrup. It was just for texture.
It makes them pretty right? Enjoy!

Ingredients:
-- 1 handful of cherry tomatoes

California Roll
Difficulty: Easy
Time: 60min (includes rice cooking time)
Number of servings: 4 rolls (24 pieces)
Ingredients:
1.5 cups uncooked Japanese rice (short-grain rice)
A
* 2 tbsp. rice vinegar
* 2 tsp. sugar
* 2/3 tsp. salt
1 avocado
12 imitation crab sticks
2 nori sheets
toasted sesame seeds
soy sauce
wasabi (Japanese Horseradish Paste) if desired
pickled Ginger if desired
Directions:
1. Cook rice and place in a bowl. Add A while the rice is hot and slice through rice using rice paddle to separate the grains.
2. Peel avocado and cut it into 8 strips.
3. Cover a bamboo sushi-roll mat with plastic wrap. Cut nori sheet in half and place it on the bamboo sushi-roll mat, shiny side down.
4. Spread 1/4 of sushi rice (1.) on the nori sheet using your finger tips, little bit moistened with water. Sprinkle sesame seeds over the sushi rice and turn it over so that the nori sheet facing you.
5. Place avocado and imitation crab sticks lengthwise on the nori sheet. (cut them if too long.)
6. Roll the bamboo mat forward, hold the line of ingredients firmly with your fingers, stop and leave about 1/3 inch of sushi rice, make sure all the ingredients are pressed in, roll it completely, gently press the mat around the roll to shape it (do not squeeze).
7. With a moistened knife (bread knife cuts well!) cut the roll into 6 pieces (re-wet as needed. don't push but pull to cut!).
8. Serve with soy sauce, wasabi, and pickled ginger.
The bread knife, I mentioned in the recipe, is the Miracle Blade which I purchased at eBay 5 years ago.
I saw it on TV and wanted to get one! On TV, it could even cut a rock!!! haha

Lucky Eho Maki (Salmon Avocado Alasca Futomaki Sushi Roll) Recipe 福を呼ぶ恵方巻き レシピI named it "Lucky Eho-Maki" because I used seven lucky ingredients including lucky colors such as red and yellow: smoked salmon, corn, onion, baby leaves, avocado, mustard mayonnaise, and cracked black pepper.
February 3rd is Setsubun. It is the day before the beginning of Risshun (spring season). On Setsubun, we cleanse away all the evil of the former year and drive away disease-bringing evil spirits for the year to come. This special ritual is called Mamemaki (bean scattering). On this day at night, it is customary now to eat uncut maki-zushi called Eho-Maki ("lucky direction roll") while facing the yearly lucky compass direction, determined by the zodiac symbol of that year.
The lucky direction of the year 2014 is east-northeast. If you eat Eho-Maki facing in that direction it will bring you a good luck. But just remember you have to close your eyes and eat all without speaking! You can speak after you complete it ;)

Directions:
1. Place cooked Japanese rice in a bowl. Add Sushisu while the rice is hot and slice through rice using rice paddle to separate the grains. (Cool the rice before you use.)
2. Cover the bamboo sushi-roll mat with plastic wrap. Place nori sheet on the bamboo sushi-roll mat, shiny side down.
3. Spread sushi rice (1.) on the nori sheet using your finger tips, little bit moistened with water.
4. Place A lengthwise on the nori sheet.
5. Roll the bamboo mat forward, hold the line of ingredients firmly with your fingers, make sure all the ingredients are pressed in, roll it completely, and gently press the mat around the roll to shape it (do not squeeze).
You want to eat uncut sushi roll, so don't cut it. You can of course make it smaller!!!

Don't you have an experience selecting hard unripe avocado even if you have examined it carefully?! This is the perfect way of eating such a hard avocado! (The heat will make the avocado soft.)
I will show you 3 simple seasonings. I love them all, but my best is butter and soy sauce ;) BTW, butter is a must! haha

Ingredients:
1 avocado
butter
#1 salt + black pepper
#2 soy sauce
#3 salt + curry powder
Directions:
1. Cut avocado into thick slices.
2. Heat butter in a frying pan and pan-fry the avocado slices for about 3 minutes or so each side until golden brown. (Cover to prevent butter from splattering.)
3. Sprinkle your favorite seasonings.
Shrimp Avocado & Mango Salad.Today we're making a delicious shrimp mango and avocado salad, with hints of ripe grapefruit and other lovely Caribbean ingredients.
Shrimp & Avocado Salad (w/ Lime Vinaigrette)This is a really simple, healthy option for those who love seafood as much as we do!
INGREDIENTS:
IN THE SALAD: 1 lb. of shrimp, 1 avocado (diced), 1/4 cup red bell pepper (diced), 1/4 cup jicama (diced), 1/4 cup red onion, salt, pepper, Old Bay, olive oil
IN THE VINAIGRETTE: 1 teaspoon sherry wine vinegar, 1 garlic clove (minced w/ salt), juice from 1 lime, 1 teaspoon of agave nectar, a pinch of thyme, 1/4 cup olive oil
INSTRUCTIONS:
THE SALAD
1. Peel & de-vein shrimp.
2. Place on a baking sheet covered in aluminum foil. Toss in olive oil, salt, pepper, & Old Bay.
3. Roast at 375 for 12 - 15 minutes (will vary depending on the size of your shrimp).
4. Dice 1/4 cup red onion, 1/4 cup red bell pepper, and 1/4 cup of jicama. Dice 1 avocado. Add these ingredients and the shrimp to a large bowl. You can cut the shrimp in half if you'd like.
THE VINAIGRETTE
1. Mince 1 clove of garlic with salt.
2. Add the juice of 1 lime (we didn't have a juicer today, so we microwaved the lime for 10 seconds to help make juicing easier).
3. Add 1 teaspoon of sherry wine vinegar, 1 teaspoon of agave nectar, & a pinch of thyme.
4. Add 1/4 cup of olive oil while whisking. Mix thoroughly and then pour over salad.

Next up on CopyKat.com, I am going to show you how to bake eggs and
avocados. Who hasn't seen this lovely photo on Pinterest of this beautiful
avocado and eggs baked together? I'm going to show you how to do that this
morning.
I've kind of gotten started here with a couple. The first thing you need to
do is go ahead and slice that avocado in half. I'm just using a fancy
little tool here. You can use a knife; they work really, really well.
You're going to split this open, and you're going to take out the pit out
of the avocado.
The picture doesn't show you that if you pour a large egg into the spot
where the avocado was, that the egg is going to run all over. The first
thing we need to do is we need to flatten out the avocado so it'll lie nice
and flat. Then you need to scoop some of this out, because again, if you
use a large or extra-large egg, it is going to overflow. Perhaps if you
want to make a whole bunch of these for company, buy some small eggs and
use those because those would probably work better.
We're going to scoop this out, and the next thing we're going to do is
we're going to take a sheet of aluminum foil here, and we're going to make
a little basket for the avocado and the egg, because some of the egg may
run over. This will really help with that.
Just repeat until you have all of them that you want done. Now you are
simply going to crack an egg and put it into one of the avocado halves.
It's very, very easy to do. You see, you just drop it in there, just like
that. When you get them all in there, let's go ahead and season these up. I
put a little bit of salt and a little bit of black pepper on here. I have a
secret ingredient; it's really not secret. I am going to put a little bit
of smoked paprika on the top. It adds a nice little bit of color and a
little bit of heat.
The next thing happens is these go in a 350 degree oven for about 20 or so
minutes. Depending upon how hard you like the yolk is how long you're going
to cook them. I topped mine with just a little bit of crispy bacon. I'm
going to go ahead and take a bite of this.
