In this video, I'm going to show you how I make my fish stew.
For ingredients you will need:
2 fresh fishes, I used red snapper
3 fresh tomatoes, mashed
2 tps of tomato paste
1 large onion, and some shallots
4 garlic gloves
A small piece of fresh ginger
chili pepper
1 bouillon cube,
Black pepper
For vegetables, I'm going to add
Potatoes, carrots and cabbage
Oil and few spaghetti for thickening the stew.

In this video we are going to make a sweet and delicious south African treat called koeksisters. They can be served cold for dessert or enjoyed as snack.
Koeksisters are a traditional South African treat. And here a simple recipe on how to make them.
Ingredients
500g of sugar
Juice of one lime
1 tbsp of ginger (fresh or ground) of ginger
One cinnamon sticks
Two cups of water
2 cups of flour
1 egg
2 tablespoons of butter
150 ml of milk
Vegetable oil for deep frying
1 teaspoon of salt
2 tablespoon of baking powder
And water as needed
Direction:
Start by making the syrup, you can make the syrup one day before the cooking time.
Bring the water to boil then add the sugar and stir until it totally dissolves. Add the lime juice, the cinnamon sticks and the ginger. Stir well, then reduce the on low and cook for 15 to 20 min.
Then transfer in a bowl and keep in the refrigerator for at least 8h .
The next step is to make the dough
Transfer the flour in a larger bowl , add the baking powder and the salt.
Then rub the butter in the flour, mix the butter very well with flour before you add in the egg.
Add the milk in the flour mixture and try to form dough. You might need to add a little bit of water if the dough is too dry or more flour if it is too sticky. Knead the dough for few minutes.
Next, put the dough in the refrigerator for 30 minutes. This step will make the dough easy to work with.
After 30 minutes, knead the dough a little more and divide it into small size.
Use your rolling pin to flatten the dough.
Cut the dough into strips and divide each into 3 don't cut all the way trough .
Plait each one all the way to the end.
Heat the vegetable oil and deep fry until golden brown.
Next, Remove and drain the koeksisters -- dip them in the cold syrup
When the koeksisters absorb enough of the syrup remove .
You can serve them immediately or very cold.

Ingredients:
6 heaped table spoons of plain/all purpose flour
3 Table spoon of butter/ margarine
1 large onion
2 cloves of garlic
1 teaspoon of salt
A pinch of nutmeg
Vegetable cooking oil for deep frying.
Method:
Pour flour into mixing bowl
Add salt
Add nutmeg
Add margarine
Rub in the margarine to get a sandy texture
Blend onion and garlic with cold water
Add the onion and garlic mixture Bit by bit (about 4 table spoon for this recipe)
Bind them together to make it into a hard dough
Use your rolling pin to flatten the dough till about 0.5 - 1 cm thick
use your knife to divide the pastry into long stripes
now take each stripe and cut into tiny chips sizes.( the smaller the crispier).
Heat the oil in pan for deep frying.
Allow the oil to heat up well and put the cut chips in, using your spatula to separate them
stire every other minute till well done.Normally done when colour is golden.
Remove when done onto your seive to get rid of excess oil.
continue this frying process till all done
Allow to cool and enjoy.
The remaining can be put in an air tight container, or food bag.
Enjoy.

How To Prepare Jollof Rice (Ghana Style)Preparing Jollof rice with the Ghanaian method.
Ingredients in this recipe for 4 Adults:
4 cups of rice
8 pieces of Chicken thighs and drum stickes
3 large onions
Pepper, garlic,ginger (amount optional)
Chicken seasoning/ seasoning of choice
2 cups mixed veggies
1 can Tomato Plumps &Tomato puree
Salt to taste
Maggie cube( optional)
Procedure:
1.
Prepare chicken, wash and pat dry.
Add salt to season
Blend some onion,ginger, garlic and pepper
Add to the chicken, add chicken season if you want.
Steam the chicken for about 8-10 min.

Blend plump tomatoes, with some onion and pepper depending on how spicy you want your jollof.
Slice the remaining onions into medium sizes.

Start making the stew or gravy by frying the sliced onions in about 3 table spoons of veggie oil and allow to cook for about 2 mins
Add 4 tablespoons of tomato puree and keep stiring for about 8 min till it is reduced.
Add the blended tomato mixture and allow to cook and reduce for about 10 more minutes, Stiring intermittently.

When the steamed chicken is ready, strain out the stock and allow to cool.
Deep fry chicken for the golden brown crusty finish.
Put the fried chicken aside.

Add the stock to the stew and allow to cook for about 5 minutes
Add your chicken to the stew( optional as chicken can be served separately when the entire meal is done).
Add the mixed veggies and cook for a couple of mins.( scoop some stew out if prefered to be served with jollof later).
Add the rice and reduce the heat to very low. Cover the rice with kitchen foil and allow the food the steam through.
Check and keep stiring intermittently till rice is cooked through, about 20 min.

Scoop some of the rice in a small bowl and press to form a nice mould, turn into your serving plate. Add your chicken.
Can be served with salad ,gravy,coslow etc.
Enjoy your meal.

Ingredients:
-1 cup rice
-1 cup black eyed beans
-Dried millet stems about
-1 Tablespoon Bicarbonate of sada
-Salt to taste
Process:
-Wash and boil the beans for about 10mins
-wash and add the millet stems, and salt to taste.
-Allow to come to a boil
-Add TB spoon of bicarbonate of soda to extract the colour and flavour of the millet leave
-Stir and remove the leaves from the pot.
-Cook for about 5 minutes and stir with fork to prevent food from going mushy.
-Reduce heat and allow to slow cook till both rice and beans are well cooked.
Scoop out into serving plate, and can be served with fried fish & stew, shito, gari, spaghetti, salad or coslow etc.

Kenya Meets Morocco (Kenyan Chicken Curry, Kenyan sauteed cabbage meets couscous and Tfaya)DISCLAIMER: Couscous is a dish made from tiny granules of durum wheat. It is closely related to pasta, as durum wheat, is the same type of wheat that is most commonly used for making pasta. Couscous originated in North Africa. I normally cook with traditional couscous. However, I was out of luck this weekend. My local grocery store had run out of traditional couscous and only had whole wheat Israeli couscous. How different could that be-right? Couscous by any other name...Anyway, Israeli couscous is a variation on the traditional couscous. Despite the larger pearl-like granules of the Israeli couscous, the darker color and the slightly chewier texture, I figured it was healthier (since it was whole wheat), and I made it work. So I hope I won't get pelted with vicious words because this does not look like the couscous you ate at the Moroccan restaurant in Marrakesh one day. No sacrilege was intended during the making of this meal. I know how sensitive people can be about their food, so I thought it wise to address this. I used the package instructions to prepare the couscous (as with this pack, I was cruising in unfamiliar territory), and threw in a few extras to make it my own. I was determined to take my taste-buds on a safari to Morocco and by God, I would make it happen (traditional couscous or not)! The idea was to make a "Kenya meets Morocco meal". So if you would like to replicate the idea, please use the North African variety of couscous :-)
The whole meal that included the following dishes:
Kenyan sauteed cabbage and peppers.
Kenyan style chicken curry.
Citrus Couscous (my aim was to cook Moroccan couscous).
Tfaya (Moroccan caramelized onions, raisins and aromatic spices).

After all the preparation was done, cooking the whole meal took a total of 35 minutes. Which was not bad at all. The end result was a delicious meal whose heady aroma of spices filled the whole house. The chicken was fork tender, the cabbage was just right with a slight crunch and some kick from the chili I used to cook it. The couscous had a slight citrus aroma and a great nutty taste and the Tfaya...I think that may have been the crown on top of this regal meal. It was to die for! The colors from the spread were vibrant and appealing. Just like I've pictured Marrakesh market square in Morocco to look like in my mind's eye.
